* 8 Tb butter
* 6 Tb flour
* 8 c. milk
* 7 t. salt (or to taste)
* 1/8 t. ground pepper
* 1/2 lb Velveeta (cut into 1" cubes)
* 4-6c shredded cheese
* 8 bacon slices cooked and chopped
* 24 ritz crackers crushed
* 1 lb elbow macaroni
Preheat oven to 350. Heat water for pasta, cook until done, then drain and let sit. Stir in a tablespoon of butter to prevent clumping. Melt butter in a large saucepan. Whisk in flour, and cook for 1 minute. Whisk in milk and heat until thickens. Add salt and pepper to taste. Add more milk if too thick. Add Velveeta, and heat back to boiling. Turn off heat and stir in shredded cheese . Spray a 9x13 with nonstick spray. Fill pan 3/4 full with pasta and stir in sauce, mixing in 1/2 of the chopped bacon. Sprinkle the crushed crackers over the pasta. Top with the rest of the bacon. Bake 25-30 minutes until topping is crispy.
